    Chicken with a nice creamy sauce served over mashed potatoes. I used mild roasted Pueblo chili instead of the roasted red pepper. I will definitely make this again

    It turned out great! Just don't like the skin and I prefer boneless as well. But the sauce was excellent. Next time, I'm gonna use shrimp! 😋

    Tasty and creamy! But cooking thighs like this did take some time and produces quite an amount of oil, though it makes a good sauce at the end!

    Loveeddd! But I also added galric cloves to the oil when heating up, garlic salt, garlic powder and substituted the half and half with heavy cream. It turned out absolutely delicious, my family loved it!

    My family loved this recipe!!!! I used zucchini instead of spinach becasue we didn’t have any...used green pepper instead of red peppers and ied fresh garlic with Some sofrito that is made by Goya in frozen section of Spanish store for a little extra flavor! Used Milk and cornstarch to make a thickened gravy becasue we didn’t have half and half!! Made small red potatoes on the side and broccoli!! Was all gone! Wonderful!!

    This is yummy! Easy to make. Used 1/2c coconut cream & 1/2 c cashew milk, sub due to family milk allergies. Also added 1 diced garlic clove to the onions as they sautéed, just because.

    The color pop in this dish is enough to make it restaurant worthy! Then add in the richness factor from the dairy products and excellent flavors and boom, you have a satisfying dinner. I added a whole cut up zucchini with the onion sautéing. Thickened up the sauce a bit, at the very end. Served with a multigrain bread round and olive dipping oil!
    Great recipe! I made a few changes that I would do again- instead of spinach, I used kale. I also added 6-7 baby portobello mushrooms and about 6 stalks of asparagus cut to 1 inch. When returning the chicken to sauce, I laid it on top and closed with the lid for it to simmer for 5 minutes.

    Delish I did add sun dried tomatoes to this because well…… I just love them in recipes like this. Very easy recipe will definitely make this again

    Pretty easy to make and very good. I cut the recipe in half, added too much cheese and forgot the spinach . Next time I will add mushrooms too but the recipe is a keeper. Even my wife enjoyed it and she doesn’t like chicken.
