- 1 batch Alfredo sauce (Creamy Cajun, , see below)
- 1 handful baby spinach
- sliced green onions (optional)
- grated Parmesan cheese (optional)
- 2 Tbsp. olive oil (or butter)
- 4 cloves garlic (minced or pressed)
- 1/3 cup all purpose flour
- 1 cup chicken stock
- 3 cups milk
- 15 oz. fire roasted diced tomatoes (drained)
- 1 cup grated Parmesan cheese (freshly-)
- 2 Tbsp. Cajun seasoning (homemade or store-bought)
