- 1/2 cup green bell pepper (diced)
- 1/4 cup red bell pepper (diced)
- 4 cloves garlic (finely minced)
- 1 Tbsp. Cajun seasoning (contains cayenne, salt, garlic powder, onion powder, herbs)
- 1 1/2 lb. smoked turkey (pieces, Can be found either frozen or refrigerated near the smoked sausage section. If you’re unable to find it, use good quality sliced smoked sausage, smoked ham or tasso.)
- 2 cups dried black-eyed peas (no need to soak, just sort them)
- 1 fresh bay leaf (medium)
- 1 1/2 qt. low sodium chicken stock (good quality)
- 1 Tbsp. sauce (tobasco)
- 1 Tbsp. Worcestershire sauce
- 1/4 cup fresh parsley
- salt
- pepper
- olive oil (good quality, to taste)
