Description
Soup is a tasty start to any meal. This recipe for Creamy Bean and Cilantro Soup takes 45 minutes to prepare and is only 150 calories per serving. - 1 Tbsp. olive oil
- 1/2 onion
- 1 clove garlic
- 1 1/2 cups beans
- 2 cups water
- chipotle chile
- 5 sprigs cilantro
- salt and ground black pepper
- cotija cheese (optional)
- feta (optional)

Directions
- Saute the onion and garlic in the olive oil until slightly browned.
- Add the beans, water, salt and pepper and allow to simmer on low heat for 15 minutes
- Remove from heat and allow to cool slightly before placing in the blender. Add the chipotle and cilantro and blend.
- Reheat thoroughly, for approximately 5 minutes.
- May serve along with a sprinkle of fresh cotija cheese and cilantro.
