- 1 1/2 lb. mushrooms (sliced, I used 1 pound cremini, 1/4 pound shiitake, and 1/4 pound oyster)
- 1 Tbsp. dry vermouth (or white wine, optional)
- 1 cup diced onion (finely)
- 1/2 cup celery (minced, about 1 stalk)
- 1/2 cup carrot (minced, about 1 carrot)
- 3 cloves garlic (minced)
- 1/3 cup all purpose flour
- 2 1/2 cups non dairy milk (I used almond milk)
- 3 Tbsp. nutritional yeast
- 1 1/4 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 8 oz. fusilli (or other small pasta shape)
- 1 lb. frozen chopped spinach (thawed and squeezed dry)
- 2/3 cup bread crumbs (preferably panko crumbs)
