- 1 red onion (medium, thinly sliced)
- 1/2 cup bbq sauce (organic, 2 tbsp. divided)
- 1 cup shredded mozzarella cheese
- 1 handful cilantro (for garnish, optional)

Directions
- Preheat oven to 400 degrees
- Toss the chopped chicken with 2 tbsp. BBQ sauce. Set aside.
- Heat the oil in a medium skillet over medium high. Add the onions and sauté until softened and slightly charred, about 8 minutes.
