- 6 oz. baby bok choy (sliced ¼" and washed)
- 2 Tbsp. cilantro (roughly chopped)
- 1 avocado (ripe, peeled and pitted)
- 2 Tbsp. fresh lime juice
- 1 tsp. toasted sesame oil
- 2 tsp. maple syrup
- 1/2 tsp. sea salt (+ more to your taste)
- 6 oz. salmon fillet (grilled and set aside to cool)
- 6 oz. grilled chicken (cooled)
- edamame (or freshly steamed, for vegetarian, vegan, or side dish versions of this dish)
