Description
This decadent side dish is a steakhouse favorite for a reason. Its rich, creamy goodness goes with just about anything — from a thick and juicy steak to a holiday turkey, weeknight roasted chicken breast, or even a split baked potato. A 16-ounce package of fresh spinach may look like a lot at first, but it will wilt down quickly once it hits the heat. The recipe, which makes 3 cups, is a Yummly original created by Ashley Strickland Freeman.

- 1/4 cup salted butter (divided)
- 3 cloves garlic (minced)
- 4 oz. cream cheese (cut into pieces)
- 1 cup whipping cream
- 1/2 tsp. ground nutmeg
- 1/2 cup freshly grated Parmesan cheese
- 16 oz. fresh baby spinach
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper

Directions
- Melt 2 Tbsp. butter in a medium saucepan over medium heat. Add garlic and cook, stirring often, until softened, about 1 minute. Add cream cheese and whipping cream and whisk until the cream cheese melts. Cook, whisking occasionally to prevent scorching as the sauce cooks down, until it thickens and is reduced to 1 cup, 5-8 minutes. Whisk in the nutmeg and cheese.
- Meanwhile, melt the remaining 2 Tbsp. butter in a Dutch oven or other 5- to 6-qt. pot over medium heat. Add spinach, salt, and pepper (in batches, if necessary, as what is in the pan begins to wilt); cook, stirring frequently just until spinach wilts, about 5 minutes. Drain spinach in a colander, pressing out liquid.
- Return spinach to the Dutch oven. Pour cream sauce on top and stir until combined. Serve immediately.
