Really enjoyed making this soup. Super simple and not too expensive. I used a nutribullet instead of an immersion blender and it worked just fine!

This recipe is so simple and easy tp prepare. I love that I can make it for my vegan friends with veggie broth and coconut milk. Will use it regularly when I get zucchini in my harvest box. Another win from SkinnyTaste!

Really nice simple soup and a better way than zucchini bread to use up zucchini if you've got too many. Surprisingly tasty for so few ingredients. I pre-cooked the onions and garlic in herbed olive oil and then added the rest of the ingredients to the pot though.

Love it! Lots of flavor with so few ingredients. I didn’t have chicken broth so I used beef broth.
