- 1 Tbsp. oil (any cooking oil will do)
- 1 onion (medium, chopped)
- 1 stalk celery (chopped)
- 1 carrot (large, and throw it in for flavor)
- 16 oz. baby bella mushrooms (or a mixture of flavorful mushrooms, cleaned, stems removed and quartered)
- 1 jar button mushrooms (fancy Whole, reserving a few for presentation)
- salt
- pepper
- 1 tsp. dried sage (or to taste)
- sauce (TO THICKEN THE)
- 1 Tbsp. all-purpose flour
- 2 1/4 cups low sodium vegetable broth
- 1/4 cup vegan sour cream (see notes above for links to specific brands)
- 1 Tbsp. cornstarch
- 1/4 cup almond (SO Delicious Dairy Free, or Coconut Milk Creamer, NOTE: if you can't find these, use canned coconut milk)
- button mushrooms (Reserved fancy Whole)
- chives (Chopped)
- farro
- barley
