- 2 Tbsp. butter
- 2 Tbsp. olive oil
- 1/2 whole onion (Diced)
- 5 cloves garlic (Minced)
- 1 lb. crimini mushrooms (Chopped)
- 1 tsp. thyme (Dried)
- 1 tsp. pepper (Or To Tase)
- 1/2 tsp. salt (Or To Taste Dependent On Broth)
- 6 cups chicken stock (Gluten Free)
- 1 tsp. worcestershire sauce (Gluten Free)
- 1/2 cup cornstarch (I use Organic GMO free found over in the health food section)
- 1 handful parsley (Chopped)
- 1 cup half & half (For reduced calories I used 1/2 Half &Half and 1/2 Plain Greek style yogurt, it leaves a slight tang to the soup from the yogurt but is still nice and thick.)
