  • 2 tablespoons olive oil
  • 1/2 whole onion (Diced)
  • 5 cloves garlic (Minced)
  • 1 pound crimini mushrooms (Chopped)
  • 1 teaspoon thyme (Dried)
  • 1 teaspoon pepper (Or To Tase)
  • 1/2 teaspoon salt (Or To Taste Dependent On Broth)
  • 6 cups chicken stock (Gluten Free)
  • 1 teaspoon worcestershire sauce (Gluten Free)
  • 1/2 cup cornstarch (I use Organic GMO free found over in the health food section)
  • 1 handful parsley (Chopped)
  • 1 cup half & half (For reduced calories I used 1/2 Half &Half and 1/2 Plain Greek style yogurt, it leaves a slight tang to the soup from the yogurt but is still nice and thick.)
