For some reason I had trouble following the 3 different sets of ingredients, so I ended up with the topping amounts of brown and white sugar, in the cake layer. To compensate, I put the cake amounts in the topping layer. I also saw that OP used 3 medium apples, but somehow missed that it was 1 1/2 c...so I used 2 gigantic honey crisps, which I’m pretty sure was a lot more than that. Due to the extra moisture, I had to cook it 65 min, and covered with foil for the last 10 to keep the top from burning. AND just for fun, I added both the oats and 1/4 c finely chopped pecans to the topping...What happy accidents!! Even with all of that, this cake is PERFECTION. I can’t stop eating it. SO moist, with a lovely salty crispness from the topping, and the sweetness of the apples comes through. Definitely use a very flavorful variety. I may never make another coffee cake again (or make it correctly for that matter)!
