  • 1/2 cup ground pecans
  • 1/2 cup unsalted butter (melted)
  • 1 cup finely chopped onion
  • 1/2 cup yellow bell pepper (finely chopped)
  • 1/2 cup red bell pepper (finely chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon seafood seasoning (Chef Paul’s, Magic, or other seafood seasoning, such as Old Bay)
  • 3 packages cream cheese (8 oz each, softened)
  • 4 ounces smoked gouda cheese (shredded, 1 cup)
  • 3 eggs
  • 1 pound crawfish (fresh or frozen cooked, shelled, tails packaged with juice, if you can’t find US crawfish tails, you can substitute 1 pound cooked, shelled and deveined medium shrimp, coarsely chopped)
  • 1/2 cup whipping cream
  • 1 tablespoon garlic chili sauce
  • 1/4 cup olive oil
  • green onions (chopped, green part only for garnish, optional)
