- 1 cup shredded Parmesan cheese (finely)
- 1/2 cup almond flour
- 1/2 cup ground pecans
- 1/2 cup unsalted butter (melted)
- 1 cup finely chopped onion
- 1/2 cup yellow bell pepper (finely chopped)
- 1/2 cup red bell pepper (finely chopped)
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 tsp. seafood seasoning (Chef Paul’s, Magic, or other seafood seasoning, such as Old Bay)
- 3 pkg. cream cheese (8 oz each, softened)
- 4 oz. smoked gouda cheese (shredded, 1 cup)
- 3 eggs
- 1 lb. crawfish (fresh or frozen cooked, shelled, tails packaged with juice, if you can’t find US crawfish tails, you can substitute 1 pound cooked, shelled and deveined medium shrimp, coarsely chopped)
- 1/2 cup whipping cream
- 1 Tbsp. garlic chili sauce
- 1/4 cup olive oil
- green onions (chopped, green part only for garnish, optional)
