- 1 pork tenderloin (just under 1 1/2 lbs)
- 1 cup apple juice (No-sugar added)
- 2 cups cranberries (Fresh or Thawed frozen)
- 2 Tbsp. pure maple syrup
- 1/2 Tbsp. adobo sauce (from a can of chipotle peppers in adobo sauce.)
- 3 apples (Large, I used fuji, spiralized with the 3mm blade.)
- 1 Tbsp. pure maple syrup
- 1/2 Tbsp. cinnamon
- 1/4 cup non fat greek yogurt (Plain)
- 1 Tbsp. pure maple syrup
- white corn tortillas (for serving)
- green onion (Chopped, for garnish, optional)
