- 1/2 cup pecans (coarsely chopped)
- 2 acorn squash (2 1/2 lb. total)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. kosher salt
- 1/2 tsp. black pepper (preferably freshly ground)
- 3/4 cup whole berry cranberry sauce (from a 14-oz. can)
- 2 tsp. honey
- 1 tsp. extra-virgin olive oil
- 1 tsp. white wine vinegar
- 1 tsp. Dijon mustard
- 1/4 cup crumbled goat cheese (2 oz.)
- 1 Tbsp. fresh thyme leaves (coarsely chopped, plus small sprigs for garnish)

Directions
- Preheat oven to 425°F. Meanwhile, set a sheet pan in oven to heat and put pecans in a pie pan (on top of sheet pan) to toast until golden and crisp, 8-12 minutes. Remove pecans from oven and set aside.
- With a large, sturdy knife, cut a thin slice off the stem ends of each squash so you have a flat base; discard stems. Stand each squash on flat side and cut in half lengthwise. Scoop out and discard seeds. Cut squash crosswise into 3/4-inch-thick slices. In a large bowl, combine 2 Tbsp. olive oil, the salt, and pepper. Add squash and toss to coat.
- When oven has preheated, remove hot sheet pan and carefully arrange squash in a single layer.
