- 1 boneless pork shoulder (or butt, about 3 lbs)
- 1 Tbsp. ancho chile powder
- 2 tsp. ground cumin
- 1 1/2 cups dried cranberries
- 1 Tbsp. granulated sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 cup water
- 4 tsp. cornstarch
- 4 tsp. water

Directions
- Coat slow cooker bowl with nonstick cooking spray
- Season pork with ancho chile power, cumin, salt and pepper. Place in slow cooker; sprinkle cranberries around pork and pour in 1/2 cup water
- Cover and cook on HIGH for 6 hours or LOW for 10 hours
- Carefully drain liquid into a small saucepan; whisk in sugar and bring to a simmer. In a small bowl, blend cornstarch with 4 tsp water. Stir cornstarch mixture into saucepan. Simmer 1 minute, until thickened. Remove pork to a cutting board and shred, discarding any tough or fatty sections. Return shredded pork to slow cooker; stir in thickened liquid.

We really enjoyed this one and it was easy. I was expecting it to have more of a kick because of the ancho chile powder, but it was actually more of a sweet pork because of the dried cranberries. Another plus is that my husband and I thought it tasted even better as leftovers. :)
