- beer cheese
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 tsp. garlic (chopped)
- 2 tsp. paprika (dark)
- 4 oz. cream cheese
- 6 oz. shredded cheddar cheese
- 12 oz. beer (your favorite, we used IPA, however it was bitter for some. I liked it alot, but I would suggest a more subtle flavor such as a lager)
- pretzels (Soft)
- 3 1/2 cups flour (bread flour works best)
- 1 pkg. instant yeast
- 2 tsp. salt
- 3 Tbsp. butter (melted)
- 3 Tbsp. brown sugar
- 1/3 cup baking soda
- 2 eggs
- coarse salt (kosher)

No, didn’t care for the taste. Consistency was good but neither my husband nor I liked the dip. Pass.

The pretzels are soft, not a traditional crunchy outside, just slightly. I followed the cheese recipe to the specifications. It came out quite bitter. Can’t blame the cheese or beer, mild cheddar and Sam’s Octoberfest. I added some Worcestershire sauce, half and half, and a small amount of American cheese. That made it much smoother.

This cheese recipe is so good I made it on consecutive days. First day, yellow extra sharp cheddar with a Green Bench IPA. Took it to a Halloween party and folks loved it!
Made it the following day with white cheddar and a Kona Big Wave...just as tasty, just a tad different!
