- 4 boneless pork chops (about 3/4-inch thick)
- 1 cup flour
- 3 eggs (beaten)
- 1/2 cup Parmesan cheese
- 2 cups cheddar cheese crackers (crushed)
- 1 cup mushrooms
- 1/2 red bell pepper (cut into chunks)
- 1/2 zucchini (cut into chunks)
- 1/2 cup cherry tomatoes
- 1 Tbsp. olive oil
- salt (to taste)
- black pepper (to taste)

Directions
- Prepare 4 wooden skewers by pre-soaking in water.
- Preheat oven to 350°F. Line a baking sheet with parchment paper. Place cheddar cheese crackers in a plastic bag and crush with a rolling pin.
- Set out three shallow dishes: place flour in the first, eggs in the second, and the parmesan and cracker crumbs in the third.
