- 1 cup oyster crackers
- 3/4 cup Ritz Crackers
- 1/2 cup leaf parsley (fresh flat-, chopped)
- 1 Tbsp. Old Bay Seasoning
- 1 tsp. garlic powder
- 1/4 tsp. cayenne pepper
- flour (for coating)
- 2 large eggs
- virgin olive oil (extra-, for frying)
- 4 tilapia filets
- salt
- pepper
- flour tortillas (warmed)
- avocado (sliced)
- 1/2 green cabbage (small, thinly sliced)
- 3 carrots (peeled and shredded, I just use my vegetable peeler to make pretty strips!)
- 1/2 red onion (small, very thinly sliced, rinsed under cold water and patted dry)
- 3/4 pineapple (cut into a small dice, about 3 cups)
- 2 jalapeño (finely chopped, If you want less spice, remove the ribs and seeds!)
- 1/2 cup cilantro leaves (chopped fresh)
- 1/4 cup fresh mint leaves (chopped)
- 1/4 cup extra-virgin olive oil
- 1/3 cup fresh lime juice (from 4 limes)
