- 8 oz. crabmeat (fresh lumpfish, or imitation crabmeat)
- 3 bulbs fennel (tops removed and fronds reserved)
- 4 radishes (medium, tops removed)
- 2 cups arugula (washed well and any tough stems removed)
- 1/2 cup wish-bone thousand island dressing
- 3 Tbsp. almonds (lightly toasted and chopped)

Directions
- In a bowl, add the crabmeat and half of the dressing and toss until well coated.
- With a mandolin or knife, thinly slice both the fennel and radishes. In a large bowl, add the fennel, radishes, arugula and the dressing. Toss until well coated.
- Serve the salad topped with crabmeat and garnished with chopped almonds and (optional) fennel fronds.
