- 1 lb. lump crab meat (any kind of crab)
- 8 saltine crackers
- 1 egg (beaten)
- 1/2 cup mayo
- 1 Tbsp. Dijon mustard
- 1 tsp. worcestershire
- 1 tsp. Old Bay Seasoning
- 2 Tbsp. salt
- aioli
- 2 large egg yolks
- 1 Tbsp. fresh lemon juice (plus more to taste)
- 1 garlic clove (smashed)
- 3/4 cup vegetable oil
- 1/4 cup olive oil
- 1 1/2 tsp. Old Bay Seasoning (plus more to taste)

Directions
- Carefully pick thru crab and remove any shell fragments or cartilage. Transfer crab to bowl and set aside
- Crush crackers ver finely and mix with remaining ingredients in large bowl. Gently fold in crab, being careful to only mix enuf to combine ingredients. Don't want to break crab into fine shreds. Shape into 6 cakes and refrigerate for at least an hour.

- In bowl of food processor, combine egg yolks, lemon juice and garlic. With motor running, slowly drizzle in the oils to form a thick sauce. Be careful not to add the oil too fast or the aioli will break. Once oil is incorporated, add old bay taste and adjust seasoning with salt and pepper, additional lemon juice and old bay as needed. Serve immediately or refridgerate.
