- 15 oz. black beans (drained and rinsed)
- 11 oz. sweet corn (super, drained, or use frozen corn or even off the cob if you’d like)

Absolutely delicious! The white wine vinegar is a game changer! I added olives too.

Great. Added avacado diced, navy beans intead of blackeye peas and most importantly a single canned chipotle in adobo sauce. Loved the medium heat it brought.

Great - whole family loved it! Served it over baked potatoes with choice of sour cream or vegan Greek yogurt. Didn’t have any tomatoes but our red pepper was extra big. Recommend a little less oil. Looking forward to leftovers in soft tacos with avocado.

Sooooo tasty!! If you like a sweet n spicy taste, I'd suggest adding 2-3 tbsp of honey. Mmmm!!
