- 1 1/2 Tbsp. extra-virgin olive oil
- 2 tsp. peeled fresh ginger (grated)
- 3/4 tsp. ground cumin
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 garlic clove (minced)
- 2 cups water
- 1 1/2 cups couscous (uncooked)
- 1/2 cup raisins
- 1/2 tsp. ground turmeric (this just gives the couscous a nice yellow color)
- 1 cup tomato (chopped)
- 1 cup cucumber (chopped peeled)
- 1 cup crumbled feta cheese
- 1/4 cup sliced green onions (thinly)
- 2 Tbsp. chopped fresh mint (finely)
- 15.5 oz. chickpeas (garbanzo beans, rinsed and drained, this is about half of one of those big cans of chickpeas they sell at Leader Price)
