- 1 butternut squash (medium, or other hard winter squash, peeled and cut into 1-inch chunks - I used the pre-peeled and pre-cut butternut squash)
- 3/4 cup cous cous (uncooked)
- 1 cup water
- 1 onion (diced)
- 5 Tbsp. white wine vinegar
- 2 Tbsp. red wine vinegar
- 2 Tbsp. olive oil
- 1 Orange
- 1/2 tsp. coriander (I left this out because I didn't have any)
- 1 tsp. canela
- 1/2 tsp. nutmeg
- 1 tsp. cumin
- 3 tsp. salt (to taste)
- 1 can garbanzo beans (drained)
- 1/2 cup dried cranberries
