- 185 grams gluten free flour blend (plain, I use GFA Blend A – See NOTES)
- 80 grams ground almonds (almond meal)
- 25 grams gluten free oats (oat flour, grind at home in a blender if you cannot source the flour)
- 1/2 tsp. xanthan gum
- 1 tsp. baking powder
- 1 tsp. bicarbonate of soda
- 1/4 tsp. fine sea salt
- 3/4 tsp. ground cinnamon
- 150 grams courgette (zucchini grated)
- 130 grams frozen cherries (or fresh, pitted and chopped)
- 65 grams unsalted butter (or dairy free alternative softened)
- 200 grams golden caster sugar
- 1 tsp. vanilla extract
- 2 large eggs (At room temperature – UK large, Canadian ‘Extra Large’; Australian ‘Jumbo’; and US ‘Extra or Very Large’)
- 4 Tbsp. apple sauce (pure, Pureed apple – I use a pouch of apple baby food)
- 125 grams butter (unsalted hard, block butter only)
- 1/2 tsp. vanilla paste (or powder optional)
- 250 grams cream cheese (recommend Philadelphia- Keep in the fridge until ready to use.)
- 125 grams icing (confectioners sugar sifted)
- 2 Tbsp. cherry syrup (The syrup from a jar of candied or Maraschino cherries, See NOTES)
