- 1 onion (medium, chopped)
- 3 cloves garlic (smashed)
- 1 Tbsp. curry powder (or mild curry paste)
- 240 mL chicken stock
- 1 can diced tomatoes (in puree or chunky style crushed tomatoes)
- 40 grams sultanas (or currants, a couple of handfuls)
- 55 grams sliced almonds (lightly toasted)
- 3 spring onions (chopped, for garnish, optional)
