I was pleasantly surprised by this dessert! I was able to make it totally last minute with ingredients I already had. Used fresh blueberries so the bake time was cut by 20 mins or so. It wasn’t overly sweet - the natural sweetness of the blueberries came through beautifully. I can see making this w/ other fruits too. Definitely a keeper!

I loved this! It seems like a healthier dessert option and tastes great! I was hesitant to try the crystalized ginger (truth be told…I never heard of crystalized ginger before), but was pleasantly surprised! The ginger really added a hint of extra flavor. This will be something I bake again soon!

I made it with 1-1 flour, I added a splash of lemon juice to give it more rise. It was enjoyable.
