- 8 Tbsp. oatmeal
- 8 Tbsp. cottage cheese
- 1 tsp. vanilla
- 4 egg whites
- 1 banana

Directions
- Blend all ingredients besides 1/2 of the banana
- Lightly spray a frying pan or skillet with cooking spray and put on a medium heat
- Pour the batter in a circle and cook for 2-3 minutes until light brown
- Flip and cook other side for 2-3 minutes
- Remove from pan and top with other half of banana and any other toppings of choice

These are wonderful!! We have made them with banana and blueberries. With a little sugar free pancake syrup , they are delicious!! The only thing I would suggest is to make sure your griddle has plenty of nonstick spray, or a little oil if your health plan allows. These pancakes tend to stick.
