- 4 whole pumpernickel (or whole wheat bagels toasted, use gluten free if desired)
- 8 eggs (poached)
- 1/2 cup greek yogurt (may use mayo if you like)
- 2 inches chipotle chiles in adobo (minced plus 2 tablespoons adobo sauce)
- 1 freshly squeezed lime juice
- 1 Tbsp. honey
- salt (to taste)
- pepper (to taste)
- 2 stalks rhubarb (optional)
- 1/2 cup strawberries (chopped)
- 1/2 cup fresh mango (chopped)
- 1/2 cup fresh pineapple (chopped)
- 1 jalapeño (seeded + diced)
- 1/4 cup fresh cilantro (chopped)
- 1 freshly squeezed lime juice

- 1/4 cup sun-dried tomatoes
- 1/4 cup green onions (chopped)

- 1 inch jalapeño (seeded and diced, I left half of my seeds)

- 1/2 tsp. cumin
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 4 oz. crumbled Cotija cheese
- 1 lb. ground pork
- 1 inch chipotle chiles in adobo (finely minced)
- 1/2 small onion (finely chopped)
- 2 cloves garlic (grated)
- 2 Tbsp. tequila
- 1 Tbsp. chili powder (ancho)
- 1 Tbsp. smoked paprika
- 1 tsp. oregano (Mexican)
- 1/2 tsp. cumin
- 2 tsp. pepper
- 3 tsp. salt
