- 6 garlic cloves (thinly sliced)
- 2 sprigs thyme
- 4 tsp. all-purpose flour
- 1 large onions (thinly sliced)
- 2 bunches black kale (ribs and stems removed, thinly sliced)
- 2 bunches collard greens (ribs and stems removed, thinly sliced)
- 3/4 cup heavy cream
- freshly ground black pepper
- 1/4 cup all-purpose flour
- 1 cup cornmeal (fine-grind)
- 2 tsp. baking powder
- 1 tsp. kosher salt
- 1 tsp. sugar
- 1/2 tsp. baking soda
- 1/2 cup unsalted butter (chilled, cut into pieces)
- 1 cup buttermilk
- 4 scallions (chopped)
- 1 jalapeño (seeds removed if desired, finely chopped)
- 4 oz. sharp cheddar cheese (coarsely grated, about 1 ½ cups)
