Excellent dish I added some garlic along with the onions and almonds and pepper to the chicken. Was an instant hit with the entire family!

It was my first time with Cornish hen so I was greener than the onions....the stuffing turned out pretty good....I would give it a rating of 7 out of 10. I just didn’t know how to go about cutting the hen in half.....I will definitely use this recipe again.
