As it happened, we had Cornish hen for Christmas Day dinner and we had several left over. I didn't have parsnips, but I did have leftover both cooked and raw carrots, fresh celery and green beans. I doubled the recipe and used "Better Than Bouillon" organic reduced sodium chicken base. Also used 1/2 cup brown and 1 cup white rice. One of our sons won't eat meat, replaced the bacon with turkey bacon (which was already cooked from breakfast). What a treat. This was delicious and the son who doesn't eat much of anything, enjoyed. I am Italian, therefore it was served with Parmesan cheese on top. YUM ! Will be making again.
