  • 9 tablespoons butter (chopped, at room temperature)
  • 1/2 cup sugar
  • 1 medium egg
  • 1/2 teaspoon vanilla extract
  • 1 cup self raising flour (sifted)
  • 1/2 cup raisins
  • 1/4 cup milk chocolate chips
  • 5 cups cornflakes

    Directions

    1. Preheat the oven to 350°F. Lightly grease and line 2 large oven trays.
    2. In a bowl, cream butter and sugar together until light and fluffy. Beat in egg and vanilla.
    3. Fold flour, raisins, chocolate chips and half the cornflakes into the mixture.
    4. Roll tablespoonfuls of mixture into balls and roll into remaining lightly crushed cornflakes. Arrange on trays about 2 inches apart.
    5. Bake for 15-20 mins until golden. Cool on tray for 5 mins. Transfer to a wire rack to cool completely.

    Great recipe, I left out the raisins, cookies were crispy and kind of soft in the middle. Will make again!
