- 1/2 tsp. ground ginger
- 1 Tbsp. red wine vinegar
- 40 oz. jackfruit (YOUNG, in brine, NOT ripe jackfruit in syrup, found in Asian markets or online)
- 1/4 tsp. smoked paprika (for color and smokey flavor)
- 1 head green cabbage
- 6 large carrots
- 3 lb. yukon gold (or Red Potatoes)
