- 1 head cauliflower (if you want both colors, double the recipe and get one cauliflower and one broccoflower)
- 1 Tbsp. vegetable oil
- 2 ears of corn
- 1/2 red onion (small, finely diced)
- 1/2 lime (or lemon right now while limes are getting scarce)
- 15 oz. chickpeas (rinsed and drained)
- 4 tsp. chaat masala (divided)
- 1/2 cup fried onions (approx crispy)
- 1/2 cup potato (approx, sev, crispy fried skinny noodles made of potato*)
- chutney (tamarind, plan on at least ½ cup)
- greek yogurt (plan on at least ½ cup)
- chutney (Green Mint, recipe below, plan on at least ½ cup)
- 1 bunch cilantro leaves (about 3 cups of leaves; tender stems can also be used in this recipe)
- 2 bunches mint leaves (about 11⁄2 cups)
- 2 serrano chilies (green)
- 1 tsp. cumin powder
- 1/2 tsp. salt (or to taste)
- 1 tsp. black salt
- 1 tsp. sugar
- 2 tsp. oil (such as mustard or canola)
- 2 Tbsp. fresh lime juice
