Description
Bring the spicy Latin Flavor of the Chipotle pepper to the grill. Corn hash is a wonderful summer staple and adding a center cut pork chop with the zing and spice of the Chipotle pepper takes this dish to the next level. This is an easy, fresh, and eager-to-please dish for your friends and family.

- 1 center cut pork chop (a.k.a. New York pork chop, bone-in)
- canola oil
- bbq sauce
- 1/4 cup chipotle puree (store-bought)
- 1 Tbsp. olive oil
- 2 ears sweet corn
- 1/2 cup red onion (diced)
- 1/2 cup red bell pepper (diced)
- 1/2 cup radish (diced)
- 1 jalapeno (finely minced; to make milder, remove seed pods)
- 1 cup chopped kale
- 3 Tbsp. apple cider vinegar
- freshly ground black pepper (to taste)
- 6 large eggs

Directions
- Set up a grill for medium-high indirect heat. Lightly brush the pork chop with canola oil and let stand at room temperature for about 30 minutes.
- Place the pork chop over direct heat on the grill and cook until charred, about 4 minutes on each side or until golden brown.
- Mix the BBQ sauce with the Chipotle puree and brush the pork chop generously with the Chipotle BBQ sauce. Move the pork chop to indirect heat. Cover with foil to slow cook to a minimum internal temperature of 145 F degrees with 3 minutes rest.
