- 4 cups chicken broth
- 1 1/2 cups milk
- 1 cup heavy cream
- 4 cups corn kernels (from 4-5 ears corn reserve cobs for stock)
- 4 oz. bacon (chopped)
- 1 onion (large, finely diced, 1 1/2 cup)
- 1 large carrot (cut into 1/4" dice, 1 cup)
- 3 stalks celery (finely diced, 1 cup)
- 1 lb. potatoes (Yukon, 3 medium, peeled and cut into 1/4" thick pieces)
- 3 tsp. sea salt (or to taste)
- 1/4 tsp. black pepper
- 1/4 tsp. cayenne pepper (or to taste)
- 2 Tbsp. chives (chopped, to garnish, optional)

I make this regularly at work and it's always loved! I have to use frozen corn but it works just fine. I add a little garlic powder and also a bit of sugar to bring out the sweetness of the corn.

I made it lacto/ovo vegetarian with veg broth and no bacon I added some thyme. I’m sure the bacon adds more depth to it but still really good!!

for me i needed some spice not spicey but i added some extra stuff..but it was good over all

I really like this recipe and have now made it 3 times.
As a vegetarian though, I add smoked paprika to replace to flavour of the bacon.
I also add peppers to the pan with the onions, red peppers help make the colour more warm and slightly orange.
Also, for a purely nutritional point of view I add quinoa and a very finely chopped sweet potato to the soup pot after taking the corn cobs out.

Great chowder—! I added some cubed chicken to up the protein, a splash of lemon juice to brighten it a bit, and a couple drops of Mongolian fire oil instead of cayenne—

Easy recipe to follow. Fast if you use frozen corn. Tasty. It will be prepared again at my place.

it was pretty good but a bit spicy for my taste. I would add less cayenne next time

I’ve made this twice now and both soups were excellent! Both time I used frozen corn and a can of creamed corn added to the milk, broth and cream. I used 1.5 cups of carrots and blended almost the entire thing. It’s really really good!

Too hard with the corn cobs so just put in frozen corn. Used blender to make it a chowder/

This was incredible! I added a can of petite diced tomatoes and extra garlic. 1 1/2 tablespoons of white wine vinegar at the end really brightens the flavor. I’ll definitely be making this again.

Turned out lovely, however I needed to add a bit more seasoning to it as it was a bit bland. Cumin was
necessary as was pimento. But that's just me. The recipe is a great base from which to add your own flair.

I really enjoyed it. I ended up tossing it in a slow cooker and cut back on the broth and upped some of the spices. Came our fantastic. Will definitely make again!

Meh. This was ok. Nothing special. I added a few Parmesan rinds and a slurry if corn starch to thicken it and it still lacked flavor and body. I think I would use another recipe next time.

AMAZING WILL MAKE AGAIN!!! i made a few changes because i got lazy with it. I used 2 cans of corn (drained) and didn't use onions or carrots. I also replaced cayenne pepper with onion powder and threw eveything in the pot at once and cooked the potatoes til soft in the mix. It's still really really good. more of a liquid soupy consistency than thick.

OMG so good. I rarely eat an entire recipe of soup because I get sick of it but this one was scraped clean. Making it again today!
