- 1 Corn Bread (recipe Stale Old Fashioned, cut into 1 inch chunks, about 12 cups)
- 1 Tbsp. olive oil
- 1 yellow onion (large, finely diced)
- 3 rib celery (finely diced)
- 8 oz. mushrooms (chopped, optional)
- 3 cloves garlic (minced)
- 1 lb. breakfast sausage (I used links, and cut them up – cooked)
- 10 sage leaves (chopped finely)
- 5 sprigs thyme (just the leaves, chopped)
- 4 1/2 cups chicken stock
