Description
Most of us think of fresh basil when we hear the word pesto. However, pesto can be made from a combination of any fresh herb and olive oil. This recipe for homemade pesto uses coriander as its fresh herb and substitutes macadamia nuts for the classic pine nuts. Seasoned with garlic and chili powder, this pesto packs a little heat. This homemade coriander pesto is easily made by combining all of the ingredients in a blender or food processor.

- 80 grams coriander
- 1 clove garlic
- 40 grams macadamia nuts (roughly chopped)
- 1 tsp. chilli powder (ground)
- salt
- ground black pepper
- 150 mL olive oil

Directions
- Place all the ingredients into a food blender, except the oil, and mix thoroughly.
- Season to taste.
- Add the oil gradually while blending until it reaches a smooth consistency, as in the photo.
- Should make about 150 grams.
