- 2 1/2 cups dry red wine (see suggestions below)
- 1 cup beef stock
- 8 oz. thick cut bacon (diced)
- kosher salt
- cracked black pepper
- 1 shallot (large, peeled and finely-diced, or 1/2 cup finely-diced white onion)
- 1 cup pearl onions (frozen, thawed)
- 3/4 lb. baby bella mushrooms (halved)
- 6 garlic cloves (peeled and minced)
- 1/3 cup flour (all-purpose)
- 1 Tbsp. tomato paste
- 1/4 cup cognac (or brandy)
- 4 thyme sprigs (fresh)
- 2 bay leaves
- curly-leaf parsley (chopped, for garnish, optional)
