- 1/2 Tbsp. olive oil
- 4 chicken legs (thighs and drumsticks attached - or you could do separate thighs and drumsticks and reduce the cooking time by 10 minutes)
- 2 Tbsp. gluten free flour blend (plain/all purpose flour -, is fine)
- 1 pinch salt (and pepper)
- 170 grams bacon (/pancetta - sliced into thin strips)
- 1 onion (peeled and finely chopped)
- 1 leek (chopped)
- 6 brown mushrooms (medium, sliced)
- 2 garlic cloves (peeled and minced)
- 500 mL wine (Riesling)
- 240 mL chicken stock (use vegetable bouillon for gluten free)
- 1 pinch dried thyme
- 120 mL heavy cream (double/)
- 1 handful chopped parsley

Excellent! I only subbed Chardonnay for reisling because it’s what I had on hand and it was still a fantastic recipe. Will do again.

Great! Really tasty and I have to say the timings were bang on. I often find I need to cook stuff for longer but this was just right. You need a big pan or do it in 2 pans though.

This came out very good, my husband LOVED it! I used cauliflower rice and spinach instead of pappardelle and kale, which held up just as nicely. Personal preference, I would have browned the chicken for longer and added a little more salt.

Not impressed. Pappardelle in the title but not mentioned in the ingredients list. So no indication of amount for four servings.
Kale is obviously the “greens” In the recipe, also not mentioned in the ingredients.

Fantastic! Left out the cream and the sauce was still excellent with very tender and flavorful chicken
