- 2 lb. turkey (. either shredded leftover turkey or cooked turkey cutlets, chopped up)
- 3 Tbsp. olive oil
- 1/2 cup edamame
- 1/2 cup chopped celery
- 2 large carrots (peeled and chopped)
- 1/2 cup frozen corn
- 1 can garbanzo beans
- 1 can kidney beans
- 2 cloves garlic
- 2 cups crushed tomatoes
- 1 Tbsp. chili powder
- 1 tsp. cumin (roasted, . regular cumin will work too)
- 1 tsp. white pepper
- 1 tsp. garlic powder
- 1 Tbsp. Italian seasoning
- 1 small onion (chopped)
- 1 Tbsp. tomato paste (I like this tubed tomato paste the best.)
- 2 cups vegetable broth (if you’re making this on the stovetop- see notes about this at the start of this post.)

Delicious. Easy but involved. I had to sub peas for edamame, but still delicious.
