  • 2 pounds turkey (. either shredded leftover turkey or cooked turkey cutlets, chopped up)
  • 3 tablespoons olive oil
  • 1/2 cup edamame
  • 1/2 cup chopped celery
  • 2 large carrots (peeled and chopped)
  • 1/2 cup frozen corn
  • 1 can garbanzo beans
  • 1 can kidney beans
  • 2 cloves garlic
  • 2 cups crushed tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon cumin (roasted, . regular cumin will work too)
  • 1 teaspoon white pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1 small onion (chopped)
  • 1 tablespoon tomato paste (I like this tubed tomato paste the best.)
  • 2 cups vegetable broth (if you’re making this on the stovetop- see notes about this at the start of this post.)
