I followed the recipe and the directions and got amazing al dente noodles but a horrible texture on the cheese, not creamy at all. It had a similar texture to having chunks of fresh mozzarella added in after it cooled too far for the cheese to melt. Grainy would have been an improvement. If I make this again, I will use a softer cheese like colby or do a 50/50 blend of sharp cheddar and something like American or even cream cheese.

Not Panera but it is now my go to recipe for mac & cheese! I have made it made different ways sometimes I follow the directions and other times I will add one cup of heavy whipping cream which creates an even more saucy, creamy texture,
