Good base to start from after reading all the comments (and another similar recipe), made a few modifications. Didn’t make white sauce; Breaded the chicken with mixture of 3 heaping tbsp flour & 2 heaping tbsp bread crumbs and good amount of dried parsley (should have added some paprika or cayenne as well); Seared breaded chicken on both sides until pretty much cooked through and removed from pan; Sautéed onions and used broccoli since had no peppers until soft, then stirred in remaining flour mixture until mixed well, adding seasonings called for, slowly added wine and then broth stirring constantly to avoid lumps; Towards end stir in a big splash of lemon juice and a good amount of cream; Add thinly sliced breaded chicken, turn down heat to still bubble but not burn and cover to make sure chicken cooks through. As chicken continues to reheat & cook, cook pasta so by time it’s done chicken is ready. Topped with Parmesan. Everyone loved! (Could try with peppers, mushrooms, or spinach I think)
Says this is for 2 servings, but was plenty for 3 plus leftovers.
