- 1 tsp. minced garlic
- 3 cups fresh spinach (optional; see note)
- 1 lb. elbow pasta
- 1/2 cup unsalted butter (8 Tbsp; 115g, divided)
- 1/4 cup all purpose flour
- 3 cups whole milk
- 1 cup half and half (or more whole milk)
- 1/2 tsp. salt
- 1/2 tsp. ground mustard
- 5 cups shredded cheese (I recommend 3 cups white cheddar, 1 cup regular sharp cheddar, and 1 cup gouda)
- 1/2 cup breadcrumbs (such as Panko, optional)
- 1/2 cup shredded Parmesan cheese (optional)
- fresh parsley (optional: chopped, for garnish)

I combined these two recipes:
http://www.runs-with-spatulas.com/2012/01/creamy-mac-n-cheese-with-spinach.html?utm_campaign=yummly&utm_medium=yummly&utm_source=yummly. AWESOME. Used all the herbs and cream cheese from the other recipe, and subbed oatmeal milk for regular (gave it an amazing nuttiness like nutmeg.) And, used the egg... baked with the parm and crumbs - cheeses were gorgonzola, utah cheddar, utah green onion, brie, and a mexican blend. and cream cheese... yummy.
