- 8 wheat tortillas
- 3 Tbsp. canola oil
- 450 grams chicken (file, cut in small pieces, you can also use minced meat, I prefer not to)
- 400 grams beans (canned brown, washed and drained)
- 1 onion (small, chopped)
- 3 cloves garlic (crushed and chopped)
- 70 grams tomato paste
- 250 mL canned tomatoes (crushed, I used one seasoned with salt, pepper and chili)
- 1 tsp. ground coriander
- 2 tsp. ground cumin
- 1 tsp. paprika powder
- 2 tsp. chili paste (ground fresh)
- 100 grams canned corn (or frozen, drained)
- 100 grams cheddar (or any other mild yellow cheese, shredded)
- salt
- black pepper
- 3 Tbsp. scallions (thinly sliced)
- fresh coriander (handful of chopped)
- 1 handful cherry tomatoes (halved)
- crème fraiche (or sour cream)
