  • 1 centimeter chips
  • 3 tablespoons olive oil
  • 2 teaspoons semolina flour (optional, see headnote)
  • 1 teaspoon salt (flaky)
  • 4 garlic cloves (bruised, skin left on)
  • 4 sprigs fresh thyme
  • 150 grams white fish (fillets firm, about 2cm, 3/4in thick, I use snapper or trevally in Australia, but anything firm like cod or tilapia will work)
  • 100 grams panko breadcrumbs (3.5oz, about 1 1/3 cups)
  • 50 grams flaked almonds (1.8oz, about ½ cup)
  • 1/2 teaspoon salt (flaky)
  • 1/4 teaspoon ground black pepper
  • 1 lemon
  • 2 tablespoons olive oil
  • 1 whole lemon (quartered)
