- 1 kg sweet potato
- 1 cm chips
- 3 Tbsp. olive oil
- 2 tsp. semolina flour (optional, see headnote)
- 1 tsp. salt (flaky)
- 4 garlic cloves (bruised, skin left on)
- 4 sprigs fresh thyme
- 150 grams white fish (fillets firm, about 2cm, 3/4in thick, I use snapper or trevally in Australia, but anything firm like cod or tilapia will work)
- 100 grams panko breadcrumbs (3.5oz, about 1 1/3 cups)
- 50 grams flaked almonds (1.8oz, about ½ cup)
- 1/2 tsp. salt (flaky)
- 1/4 tsp. ground black pepper
- 1 lemon
- 2 Tbsp. olive oil
- 1 whole lemon (quartered)
- lemon mayonnaise (for serving, optional, see headnote)
