- 1 bunch kale (lacinado, large stems removed, then chopped into 1/2-1 inch pieces)

- 1 red pepper (thinly sliced)
- 1/4 cup raw pistachios (shelled, chopped)
- 5 tomatoes (small golden, or 2-3 roma tomatoes, sliced)
- lemon dressing (Sweet Onion, recipe follows)
- 1/4 yellow onion (sweet, chopped)
- 2 cloves garlic
- 1/2 lemon (juiced and zested)
- 1 tsp. cane sugar
- 3/4 tsp. fine sea salt (or to taste)
- 1/4 tsp. ground black pepper (or to taste)
- 2 1/2 Tbsp. olive oil
