- 2 cups chicken broth (and more if necessary)

- 1 yellow potato (medium, cut into 1- inch pieces)
- 1/2 lb. chorizo (andouille or another smoked sausage sliced)
- chopped fresh cilantro (for garnish, optional)
- 2 Tbsp. vegetable oil
- 1 medium tomato (chopped)
- 2 green onions (chopped)
- 1 garlic clove (minced)
- 1/4 cup red bell pepper (finely chopped)
- 1 Tbsp. sazon goya (with azafrán seasoning, one small package)
- 1/4 tsp. ground cumin
- 1/4 tsp. fresh ground pepper
- 2 Tbsp. chopped fresh cilantro
