- 1 red bell pepper
- 1/2 cup chopped red onion
- 1/4 cup chopped green onion
- 1/2 tomato (a medium sized, Use the whole thing if you are a tomato lover)
- 1/2 cup rice vinegar
- 2 Tbsp. apple cider vinegar
- 3 cloves fresh garlic (Use a garlic press to chop)
- 2 Tbsp. olive oil

- pepper
- Herbs de Provence
- 1/3 cup crumbled feta cheese
